Tan cuisine
Tan cuisine is named after a Qing dynasty official surnamed Tan who is reputed to have been obsessed with the taste of delicacies. Each dish in Tan cuisine is prepared meticulously, often combining several ingredients, especially in broth making, in order to achieve the best flavour. Tan cuisine is based on eastern style cuisine represented by Huaiyang -- a combination of cooking from Huaian and Yangzhou of Jiangsu province.
